"Lucy's Loaf" - Gluten free, healthy artisan bread
This recipe is the culmination of many years of research and development to find the healthiest ingredients and the best method to create the perfect gluten free loaf of bread. Created through necessity for health reasons, now "Lucy's loaf" has become my signature dish! Not only is it tasty and satisfying, my gluten free loaf is high in healthy fibre, good fats, rich in polyphenols, minerals & antioxidants, easily digestible and best of all it is very easy to make.

This healthy gluten free bread has become a daily staple in our household - thinly sliced and toasted, topped with butter, poached eggs, spinach and avocado for breakfast. It is best enjoyed very thinly sliced, toasted on a flat panini press and served with lashing of real butter (not margarine!). When it comes to health and taste, butter is definitely better. The loaves store well in a tub in the fridge for up to a week, or can be sliced and frozen for convenience. |

Updated method: Mixing the dough in the Kitchenaid Artisan stand mixer
Following on from my original method (see above), I have now acquired a shiny new machine! The stand mixer makes the dough mixing process much easier and less messy! The gorgeous Artisan velvet blue colour matches my kitchen too. After trying all the various attachments, the scraper beater (rather than the dough hook) works the best for this recipe.
I usually make three small loaves (ideal for toast) and about 16 dinner rolls (mini muffin pan) which are handy for lunchboxes, picnics, barbecues, etc. This is enough bread for our household for a week.
