Easy Roast Chicken
A roast chicken is a regular Sunday lunch in my household and provides enough leftover meat for a whole week of lunchboxes. You can also turn the carcass into chicken stock, ideal for use in risottos, soups, casseroles etc. It is a very economical way to use the whole bird. (I roasted two chickens on this occasion but one is fine to use if you want a smaller quantity).
