Berry Jelly (for a happy belly!)
Natural gelatine is a powerful healing food that provides wonderful nutrition for the joints, skin, hair, nails, brain and digestive system. Gelatine is rich in collagen that supports the connective tissues for joint health. My husband loves this jelly as he finds that it helps reduce his knee pain! Glycine, an amino acid in gelatin, may also help improve memory and attention.
- 3 tbsp gelatine powder
- 300g frozen mixed berries
- 1 carrot
- 1 beetroot
- 1 tbsp Xylitol (sugar substitute)
Place the berries, beetroot and carrot in the Vitamix blender.
Add 1 litre of filtered water to cover the fruit and blend.
In a large saucepan add 3 tablespoon of gelatine powder, 1 tbsp of Xylitol and 500mls of filtered water. (Xylitol is a natural sugar-free sweetener, beneficial for bone health). Stir briefly to combine over a low heat to gently dissolve.
Add the blended fruit and stir for ten minutes. Strain through a sieve (to remove the seeds) into a large dish and place in the fridge to set.
Serve with natural unsweetened coconut milk yoghurt.
